Innocent Bystander Chardonnay is one of the wineries two main squeezes, and this drop in particular will have you singing Yarra Valley praises.

The grapes underwent a gentle pressing, extracting only the free run juice. Approximately 40% of the wine was matured in oak barrels on lees for around 9 months. The fermentation process involved a partial use of indigenous yeasts in both new and seasoned oak barrels. Monthly stirring of the lees continued until winter. To preserve its freshness and natural acidity, no malolactic fermentation took place. Winery Notes
