Winemaking Notes
100% hand picked and fastidiously hand sorted in the vineyard. Pinot Noir parcels processed via one of two pathways — either fermented semi-carbonic with 100% whole bunch, or destemmed and fermented with whole berries — with the direction determined by clone, vineyard, stem ripeness, and flavour. Whole bunch batches fermented warm with minimal mixing for 14 days; destemmed whole berry parcels cold soaked for 3 days before natural fermentation. All cap management by gravity drain and returns for gentle extraction before pressing. Each parcel transferred by gravity to French oak barriques (16% new, 84% seasoned) for malolactic fermentation and lees maturation. In 2025, 32% whole bunches. Matured for eight months before blending in Spring and bottling in November 2025 by gravity, without fining or filtration. Vegan friendly. 13.5% ABV. Screwcap.
Vintage Conditions
The 2025 Yarra Valley season opened with a generous, wet winter that filled the soil profile with moisture — followed by a warm, dry spring with fantastic conditions during flowering and fruit set. The dry season pushed growth and ripening along even as temperatures remained barely warmer than average, a pleasant surprise. Harvest came earlier than usual and moved quickly — a compressed vintage that asked a great deal of the Giant Steps team and rewarded the effort with fruit of exceptional quality, concentration, and weight. 50% of fruit sourced from the upper Yarra ranges.
