De Bortoli The Estate Vineyard Pinot Noir 2021 (Yarra Valley)

The Estate Vineyard wines are elegant, handcrafted wines that reflect the unique characters of the De Bortoli Yarra Valley Estate in Dixons Creek. Mature vines, minimal handling, thoughtful winemaking. Exceptional quality with a distinct sense of place. The Estate Vineyard takes the place of what was known as The Estate Grown.

Classic growing season with Mid March picking. Timely spring rain, great colours, deeply scented and highly perfumed vintage.

The fruit was hand harvested and hand sorted. A combination of whole berry and whole bunch (10-15%) is tipped into open fermenters. 15-18 days of maceration and fermentation with wild yeast. Pressed, settled overnight and then filled to barrel by gravity. Allowed to mature for 8 months in 225L French casks.
