De Bortoli Noble One Botrytis Semillon 2022 is one of Australia’s most celebrated and awarded dessert wines — a rich, succulent, and beautifully balanced expression of Riverina Botrytis Semillon crafted by Winemaker Julie Mortlock from De Bortoli’s own vineyards and long-term grower fruit. The 2022 vintage saw one of the earliest harvests on record, beginning 24 March, with early summer rain kicking off exceptional Botrytis development throughout the vineyard. An explosion of honey, tropical fruits, cumquats, and candied orange peel on the nose, with scents of vanillin and a whisper of spice; a succulent display of rich Botrytis fruit with neatly balanced sweetness and acidity on the palate. Appearance

Deep, luminous gold — the rich, inviting colour of a Riverina Botrytis Semillon from one of the earliest harvests on record, with the depth and intensity that exceptional Botrytis development and careful French oak maturation deliver.

Aroma

An explosion of honey, tropical fruits, cumquats, and candied orange peel, with scents of vanillin and a whisper of spice — marigold flowers, honeysuckle, loquat fruit, golden-hued plums, and pineapple turnover, with shortbread and baked madeleine biscuits from the new oak singing behind the ripe fruit. A bouquet of extraordinary complexity and generosity.

Palate

A succulent display of rich Botrytis fruit with neatly balanced sweetness and acidity — the long, stretched acidity making for a succulence and elegance that carries the wine far beyond the ordinary. Rich, complex, and deeply satisfying, with the power to take its avid drinkers into the far reaches of pleasure.

Pairs With

Although generally considered a dessert wine, be daring — pan-fried foie gras with caramelised pears and figs, roast quail with a sticky balsamic glaze, sorbet, or poached pears in honey are all exceptional companions. Or simply pour a glass of Noble One. It is dessert in itself. 10% ABV. 375ml.

“A reticent wine on the nose, this was a very good vintage for botrytis, so hold space for what is to come with time in the bottle. Marigold flowers, honeysuckle and loquat fruit. Golden-hued plums and pineapple turnover. There is a shortbread and baked madeleine biscuits thanks to the use of new oak but it sings a chorus behind the ripe fruit, which sits in front. Acidity is long and stretched at the seams which makes for a succulence. A very elegant wine with the power to take its avid drinkers into the far reaches of pleasure. This is a wine with a very long future and definitely the vintage to collect.”

Winemaking Notes

Constant monitoring of the vineyards determines when to harvest the fruit. The 2022 vintage saw early summer rain kick off Botrytis development in early January and again in early March, leading to one of the earliest harvests on record beginning 24 March. The fruit is crushed into tank overnight to soak, allowing full extraction of flavour and sweetness before pressing and clarifying. Daily monitoring of the ferment ensures the optimal balance of flavour, sweetness, and alcohol. Following clarification, the wine was matured in 30% new French oak barriques, 60% one and two-year-old barriques, with 10% left in tank for freshness when blending. Alc/Vol: 10.0%. pH: 3.5. TA: 8.7g/L. Vegetarian.

Early summer rain once again impacted the Botrytis harvest in early January and again in early March, kicking off the Botrytis throughout the vineyard and leading to one of the earliest harvests on record — beginning 24 March 2022.
