Winemaking Notes

Grapes sourced from cool climate sites across the Yarra Valley, Strathbogie, Upper Goulburn, King Valley (Victoria), and Coonawarra (South Australia) — Chardonnay, Pinot Noir, and Pinot Meunier harvested from mid-February through to late April at 10.9–11.7° baumé. Gently pressed and fermented separately to preserve the unique characters of each variety and vineyard site. After primary and malolactic fermentation, individual components were settled, stabilised, and assessed over four to six weeks before assemblage, with base wines selected for their individual aroma, flavour, weight, strength, and length. Approximately 20% reserve wines from previous vintages were incorporated to enhance complexity and structure. Secondary fermentation in bottle under crown seal, aged on yeast lees for a minimum of 30 months, then carefully riddled and disgorged. A reserve wine and sugar dosage liqueur was generously added at disgorgement to create the luscious, rich character that defines this style. Sealed under cork and aged for a further three months before release.
