Blue Pyrenees Vintage Brut 2022 boasts a medium yellow straw colour with subtle hints of pink and a delicate yet persistent bubbling. The aroma offers a burst of red apples, strawberries, and yellow peaches, along with rich notes of cashews and crusty bread from yeast autolysis. The palate is shaped and driven by a perfect balance of crisp and lively fruit acidity, expertly complemented by a carefully chosen dosage liqueur containing just 6g/L of sugar. Maturation on yeast for two years in our underground cellars produces a satisfyingly creamy and savoury mid-palate, followed by a flavourful and lingering nutty finish.

True to Blue Pyrenees' French heritage, all their sparkling wines are created using the traditional "Méthode champenoise" technique, where the second fermentation and subsequent maturation on yeast occur in bottle.

The 2022 version of their hallmark Vintage Brut style is a carefully selected assemblage of the three classic traditional method sparkling varieties: Chardonnay, Pinot Noir and Pinot Meunier. After weeks of tasting and blending, the winemakers assembled a blend from their Estate owned vineyards and included a small parcel from the very cool Macedon Ranges to add some finesse and a crisp acid line to their generous and complex apéritif style.
