Temple Bruer reflect's there philosophy of creating sustainable wines by mindfully working with nature. They believe that certified organic vineyard practices achieve healthy balanced vines leading to excellent fruit flavour and balanced wines.

During winemaking Temple Bruer pay close attention to detail with the aim of minimising the use of additives and the movements of wine where possible.The fruit used to make this wine was harvested from the Temple Bruer’s certified organic vineyard.

The grapes were sourced from Langhorne Creek, Eden Valley & Loxton, and picked from the end of February until the beginning of April. The temperatures were mild throughout the season with many varieties ripening at the same time. This put pressure on our vineyard crews to pick at the perfect moment when all of the stars aligned and favour, ripeness and acidity were at their prime.

After gentle crushing the three separate parcels were fermented separately and the musts were fermented at a temperature range of 16 - 20° C. The wine was pressed early to ensure maximum fruit flavour and early drinkability. The Ferment finished and was matured with minimal handling to maintain freshness and prevent oxidation. A combination of French and American oak was used to enhance complexity of this wine and it was bottled on the 30th June 2016. No sulphur Dioxide was added during the making of this wine. The wine is bottled with intentional spritz to retain freshness. Winery Notes
