Sauvignon Blanc is a regional specialty in the cooler Adelaide Hills. First produced by Shaw + Smith in 1990, now widely regarded as the benchmark for Australian Sauvignon Blanc.

Sourced from cool, high elevation vineyards in the Adelaide Hills. Meticulous viticulture, with cane pruning, vertical shoot positioning, and yields limited through shoot and bunch thinning to increase fruit intensity.

100% hand picked. Fermented cool (10-12°C) in stainless steel followed by a short maturation on lees. Prompt bottling to retain freshness.

There was record rainfall throughout the growing season but importantly it reduced to average in November during flowering and was dry during March, the later part of ripening. Record low temperatures were also recorded resulting in a late, very cool vintage. Flavours are intense and the natural acidity is striking.

The style has remained fresh, aromatic, and pure over the journey. Recent evolution has been to source from higher and cooler sites, allowing us to retain lively acidity if conditions are warmer.

Typically it shows a pink grapefruit character, concentration and mid-palate texture, which reflect the carefully selected sites and hand harvesting during the small window of perfect ripeness. Winery Notes
