De Bortoli Woodfired Cabernet 2021 is crafted from vineyards in the northern section of Heathcote, mainly around Corop. The ancient red Cambrian soils of northern Heathcote are ideal for dark fruited, rich, soft Cabernet, contributing to the wine's deep purple hue bursting with ripe blackberry and blueberry flavours. The grapes were de-stemmed and fermented at 25-30°C over 8-12 days to extract the vibrant fruit character with hints of cedarwood and liquorice adding a touch of class. After pressing, the wine was matured in vats and casks for 7 months, with regular racking and aeration to soften the wine and develop balanced tannins with soft and luxurious mouthfeel. Vineyards were carefully selected for a balance of fruit weight and ripeness, ensuring authentic expression of Heathcote's unique terroir. Woodfired wines are authentically Heathcote and perfectly crafted to accompany a chargrilled ribeye, showcasing bold, brooding and delicious character with classic Cabernet taste.
