De Bortoli Windy Peak Sauvignon Blanc 2021

Most of the fruit is from select mature vineyards in the Riverina planted '79 and '89 which each year consistently produce aromatic & flavoursome Sauvignon Blanc. The remaining fruit is from the De Bortoli cooler climate vineyards in the King Valley, ideal climate for growing premium Sauvignon Blanc.

Good rains during winter and early spring allowed for good fruitfulness and healthy vines at the beginning of the growing season. A cooler then usual ripening period enabled good varietal flavours. Rain during late spring and summer increased the disease pressure but with good viticultural practices and selective harvesting we were able to begin vintage albeit about 2 weeks later than what has become the norm in recent times.

Light, juicy, easy drinking Sauvignon Blanc with loads of texture. A nod towards Loire, rather than NZ.

Wine making techniques included fermentation at elevated temperatures and fermentation with solids. These techniques improve texture and softness without sacrificing varietal expression. Wine was left on yeast lees 'sur lie' for five months prior to blending. 17% of the blend was fermented in 19 Year Old French Oak barriques for extra complexity.
