De Bortoli Windy Peak Shiraz 2018 (Heathcote)

The 2018 was a mild growing season producing Shiraz with terrific fruit intensity and concentration.

The 2018 Windy Peak Shiraz fruit is sourced from carefully selected parcels grown on the red volcanic soils of Northern Heathcote. Fruit is harvested at 14.0-15.0 Baume to achieve a balance of fruit ripeness and soft acidity. Grapes are destemmed and crushed into both static and rotary fermenters. The resultant wine is then fermented for up to two weeks on skins prior to pressing and racking. The wine is then matured for 5-7 months in older casks. This wine is Vegan & Vegetarian friendly.
