Ultraviolet is the first half of our Unseen Spectrum dual release, brewed with SH-45—a revolutionary thiol-unlocking yeast that liberates aroma compounds locked deep within grain and hops. These compounds remain chemically bound at fermentation's start; SH-45 cleaves them free, releasing tropical thiols impossible to achieve from these ingredients alone.
We mash-hopped with Columbus to establish bound thiol precursors early, giving SH-45 abundant raw material to unlock during fermentation. Cascade and Vista layer through the whirlpool and dry hop, finished with a concentrated dose of Clayton Hops Cascade Amplifier oil. The result: bright sweet papaya, ripe melon and citrus balanced against a smooth, genuinely black malt foundation.
