Bird In Hand Sparkling 2022 vintage is made up of predominantly Pinot Noir grapes, from premium cool climates sites across South Australia. Harvested during the cool of the night to retain freshness and flavour.

The fruit is crushed and de-stemmed straight to press, with minimal time on skins to ensure the extraction of only the lightest colour. Individual batches from each vineyard were kept separate right up until blending, to guarantee the winemakers could select the best fruit based on flavour, complexity and cohesiveness.
