Yarra Valley Spirits Co Wedge-Tail Gin 700mL — 38% ABV — Named for the Wedge-tailed Eagle — Australia's largest bird of prey and a majestic symbol of the Yarra Valley's wild landscape — the Wedge-Tail Gin is a beautifully pure and distinctive expression of the dry gin style, crafted using the traditional Bathtub Style method. Rather than distilling with botanicals in the still — the conventional approach used by most gin producers — the Wedge-Tail Gin is made by steeping the spirit directly with Juniper berries after distillation, allowing the berries to infuse their essential oils, flavour compounds, and natural colour directly into the spirit over time. This cold-infusion approach produces a gin of a distinctly different character from conventionally distilled gins: a slight natural yellow hue from the Juniper oils, a dry and intensely Juniper-forward flavour profile, and a purity and directness of expression that comes from using a single botanical rather than the complex botanical blends of most contemporary gins. Dry character with Juniper berries creating a sophisticated aromatic profile on the nose. Dry style on the palate with signature Juniper flavour, exceptional balance, and a dry, lingering Juniper finish. How to Enjoy Yarra Valley Spirits Co
The Wedge-Tail Gin is best served at 4–6°C in a copa glass over ice with premium tonic water (50mL gin to 150mL tonic) and a twist of lemon peel or a sprig of fresh rosemary to complement the Juniper character. For a classic Martini, combine 60mL Wedge-Tail Gin with 10mL dry vermouth, stir over ice until well chilled, and strain into a chilled Martini glass with a lemon twist. The Stag Vodka is best served ice-cold — store in the freezer and serve neat in a chilled shot glass or over ice in a rocks glass. For a classic Vodka Soda, combine 45mL Stag Vodka with chilled soda water and a squeeze of fresh lime over ice in a tall glass.
