Saltram Wine Estate — History & Heritage
Saltram Wine Estate was established in 1859 by William Salter in the Barossa Valley — making it one of the oldest continuously operating wineries in Australia. For over 160 years, Saltram has been at the heart of Barossa winemaking, drawing on the valley's extraordinary old vine heritage, diverse soils, and warm continental climate to produce wines of depth, generosity, and regional character.
The Pepperjack label was created to celebrate the Barossa's bold, flavour-forward style in wines specifically designed to be enjoyed with food. Named with a nod to the peppery, spicy character that defines the region's great Shiraz, Pepperjack has grown into one of Australia's most recognisable and beloved wine brands — a range that delivers consistent quality and genuine drinking pleasure across every style and price point.
The Regions
Barossa Valley is Australia's most celebrated red wine region and the spiritual home of Pepperjack. Located in South Australia, approximately 70 kilometres northeast of Adelaide, the Barossa is defined by its warm, dry continental climate — hot summers, cool nights, and low rainfall — and its ancient, low-yielding old vine Shiraz, Grenache, and Cabernet Sauvignon. The valley's deep, fertile soils and long growing season produce grapes of extraordinary concentration, richness, and flavour intensity. Barossa Shiraz is the benchmark of Australian red wine — full-bodied, plush, and deeply flavoured, with characteristic notes of blackberry, dark chocolate, mocha, and spice.
McLaren Vale, on the southern outskirts of Adelaide, is one of Australia's most diverse and exciting wine regions. Its Mediterranean climate — warm days, cool sea breezes from the Gulf St Vincent — and ancient soils produce Shiraz and Grenache of remarkable richness and complexity. McLaren Vale Shiraz tends toward blue and black fruit, chocolate, and a velvety, plush texture that complements the Barossa's power beautifully in Pepperjack's multi-regional blends.
Langhorne Creek, situated on the shores of Lake Alexandrina southeast of Adelaide, is one of South Australia's most underrated wine regions. Its deep alluvial soils, cool lake breezes, and reliable growing conditions produce Cabernet Sauvignon and Shiraz of exceptional fruit purity, fine chalky tannins, and natural elegance — qualities that shine in the Pepperjack Porterhouse Graded Shiraz and Grenache Rosé.
Limestone Coast encompasses a series of cool-climate wine regions in South Australia's southeast, including Coonawarra, Padthaway, and Wrattonbully. The region's famous terra rossa soils over limestone, combined with a cooler maritime-influenced climate, produce white wines of exceptional freshness, mineral precision, and aromatic intensity — the foundation of the Pepperjack Sauvignon Blanc.
Tasmania, Australia's coolest and most southerly wine state, contributes to the Pepperjack Sauvignon Blanc with its characteristic cool-climate precision, vibrant acidity, and intense aromatic character.
Mendoza, Argentina — the world's most celebrated Malbec region — sits at the foot of the Andes at high altitude, where intense sunshine, cool nights, and low humidity produce Malbec of extraordinary colour, concentration, and violet-scented fruit character. The Pepperjack Mendoza Malbec brings this South American icon into the range with genuine regional authenticity.
Grape Varieties & Styles
Shiraz is the heart and soul of the Pepperjack range. The Barossa Valley's warm climate and ancient vines produce Shiraz of extraordinary depth — ripe blackberries, dark chocolate, mocha, and subtle spice, wrapped in soft, balanced tannins and a long, elegant finish. The range spans the classic Barossa Shiraz (in both 750mL and 375mL formats), a mid-strength expression, the Dish Shiraz (a McLaren Vale and Barossa blend), and two premium Graded Shiraz expressions designed to match specific cuts of beef.
Cabernet Sauvignon is represented by both the Barossa Valley and the Dish expressions — the latter a Langhorne Creek and McLaren Vale blend. Expect ripe dark berries, blackcurrant, plum, mint, and leafy notes with smooth, chalky tannins and subtle oak.
Grenache is one of the Barossa's most exciting emerging varieties, and Pepperjack's Grenache (Barossa and McLaren Vale) delivers vivid crimson colour, fresh raspberries, mulberry, red cherry, lavender, and musk with a creamy, mineral texture. The Grenache Rosé from Langhorne Creek is pale pink and salmon-hued, with fresh strawberries, red cherries, and exceptional natural acidity.
Malbec from Mendoza brings violets, spice, ripe blueberries, boysenberry, and mocha oak to the range, with vibrant red cherry and fresh cranberry on the palate and savory chalky tannins.
Sauvignon Blanc from the Limestone Coast and Tasmania delivers white grapefruit pith, freshly crushed nettle, lychee, and mineral chalk on the nose, with vibrant citrus, lively acidity, and a textured, clean finish.
Sparkling — Pepperjack produces two outstanding sparkling wines: the iconic Sparkling Shiraz NV (rich dark red, concentrated red and blue fruits, dark chocolate, mocha, and fine tannins — 92 Points, Campbell Mattinson, The Wine Front) and the Chardonnay Pinot Noir NV (fresh grapefruit, brioche, nougat, chalky mineral acidity, and a delicate mousse).

- Pepperjack Scotch Fillet Graded Shiraz — McLaren Vale. Blue and black fruit, chocolate, mocha. Matured 12 months in French and American oak. Designed to match scotch fillet.
- Pepperjack Porterhouse Graded Shiraz — Langhorne Creek. Red and blue fruits, dark chocolate, and spice. Matured 15 months in French and American oak. Designed to match porterhouse.
- Pepperjack Barossa Valley Cabernet Sauvignon — Dark berries, blackcurrant, plum, mint, and leafy notes. Plush dark fruits and chalky tannins.
- Pepperjack Dish Cabernet Sauvignon — Langhorne Creek & McLaren Vale. Red currants, blackberries, sage, mint, and oak. Smooth lingering tannins.
- Pepperjack Red Blend — Barossa Valley. Dark cherries, cranberry, raspberry, spice, and mocha. Smooth, velvety tannins.
- Pepperjack Grenache — Barossa & McLaren Vale. Raspberries, mulberry, red cherry, lavender, and musk. Creamy, mineral texture.

Food Pairing
Pepperjack wines are built for the table. The Barossa Shiraz and Graded Shiraz expressions are the natural partners for red meat — a perfectly grilled scotch fillet, a slow-roasted lamb shoulder, or a rich beef short rib. The Cabernet Sauvignon expressions pair beautifully with lamb, venison, and aged hard cheeses. The Grenache is outstanding with duck, pork belly, and charcuterie. The Malbec loves a juicy burger or barbecued beef. The Sauvignon Blanc and Rosé are ideal with seafood, salads, and lighter summer fare.
