Tasting Notes

Appearance

This extraordinary Pays d’Auge Calvados presents a stunning amber yellow colour with brilliant clarity, displaying the exceptional quality characteristic of Dupont’s celebrated Calvados — and the remarkable visual spectacle of a real apple grown and captured inside the carafe itself, making this one of the most visually attractive and intriguing spirits presentations in the world.

Aroma

The nose is gentle and refined, with great aromatic intensity. Green apple, geranium and mint create a fresh, sophisticated and immediately captivating aromatic profile that is present at the back of the nose with wonderful persistence. The bouquet reflects the extraordinary quality of Pays d’Auge apple orchards and the unique maceration of a real captive apple within the young Calvados, adding a layer of aromatic complexity that is entirely unique to this exceptional expression.

Palate

Consistent and beautifully structured on the palate, with a slightly bitter character and the first taste delivering pure green apple in all its freshness and vibrancy. The finish is vegetal with a lot of breadth — long, complex and deeply satisfying. Dupont Calvados Pomme Captive is both visually attractive and very agreeable to taste, a spirit of genuine intrigue and distinction.

Pairs With

This exceptional Pays d’Auge Calvados is a natural companion to tarte tatin, apple crumble, Camembert, aged Comté, charcuterie, or enjoyed as a contemplative digestif after a special meal, making it ideal for gifting, special occasions and any moment that calls for a spirit of genuine French artisanal distinction and visual spectacle.

Production Notes

Dupont Calvados Pomme Captive Pays d’Auge 700mL is one of the most extraordinary and visually captivating spirits in the world. In order to create this remarkable presentation, the glass carafe is suspended in spring from the branches of the apple tree as soon as the first little apples appear. The apple then grows naturally inside the carafe throughout the season. When the fruit becomes ripe, the carafe is removed from the tree with its apple held captive inside. The carafes are then filled with young Calvados at 70%, which allows the apple to settle and stabilise. Several weeks later, they are emptied and refilled with Calvados, allowing the apple to macerate gently in the spirit. This extraordinary process creates a Calvados of unique aromatic complexity — green apple, geranium, mint and vegetal breadth — that is entirely unlike any other spirit in the world.

History

Calvados is one of France’s most celebrated and historic apple brandies, produced exclusively in the Normandy region of north-west France. The Pays d’Auge appellation is the most prestigious of the Calvados designations, requiring double distillation in traditional copper pot stills and the use of cider apples from the region’s ancient orchards. Dupont is one of Pays d’Auge’s most respected and celebrated Calvados producers, with a heritage of artisanal apple brandy production that reflects the deep agricultural traditions of Normandy. The Pomme Captive expression represents the pinnacle of Dupont’s creativity and craftsmanship — a spirit that is as visually extraordinary as it is delicious, combining the finest Pays d’Auge Calvados with the unique aromatic contribution of a real apple grown and macerated inside the carafe itself.
