A tribute to Oregon’s legendary Willamette Valley wine country, this elegant whiskey is influenced by the region’s premier grape varietal: Pinot Noir.
This cask-finished whiskey reflects the vibrance of the Valley’s signature grape while allowing the bold, robust notes of Westward Whiskey to shine through. The Pinot Noir Cask begins with Westward American Single Malt, which is then finished for up to two years in French Oak wine casks from a handful of award-winning producers in the region.
At Westward, there are no shortcuts, and therein lies the beauty. They pursue perfection by creating flavour in every step of their long, slow process.
They begin by brewing an artisanal American Ale from scratch, using locally malted barley, ale yeast, and a slow, low temperature fermentation.
They then distill twice in custom low-reflux pot stills that they designed to create a robust spirit, and transform their fresh, flavourful Ale into whiskey.
Maturation occurs in lightly charred American Oak barrels selected to accentuate the bold characteristics of their whiskey. Lastly they ‘mingle’ their barrels into small batches to achieve Westward’s signature flavour profile – balanced and bold.
