Oats and wheat set a soft base we overlaid with berry-fruity Rosella (Hibiscus). Hops push that tropical peach-pop with the help of El Dorado Incognito, Galaxy & Strata. Strata gives the beer a strawberry fruitiness with citrus undertones, while Galaxy brings passionfruit, peach and citrus to the table. Incognito El Dorado is an innovative, soluble hop product, used for its bright tropical fruit flavours. Pomelo Rooftop is a sun-drenched rooftop bar in the Melbourne CBD inspired by 1980s Miami and with a real candy-store vibe. It’s a fun, casual space where you get to try seriously inventive cocktails, boozy slushies and house-made seltzers. Focussing on sustainability, a lot of their drinks repurpose waste- or bi-products from Bouvardia, their sister venue downstairs, creating a zero-waste loop. The Pomelo Rooftop crew definitely share Tallboy's values when it comes to quality beverages made from great, local products, so Tallboy decided they should partner up and brew a beer together. Zii, the Operations Manager of Pomelo Rooftop suggested for Rosella “aka Hibiscus” to play a major role in a little, hoppy summer smasher. She loves to experiment with different plants in her cocktails and so do we in our beers - the idea for a Hibiscus Hoppy Pale Ale was born. The Pomelo team joined Tallboy for brew day and got to experience the process first hand.
