Starward Distillery Melbourne - Australian Whisky
Starward Distillery Melbourne

Starward Distillery stands as Australia's most celebrated whisky producer, crafting innovative single malt whiskies in the heart of Port Melbourne, Victoria. Founded in 2007 by distiller and entrepreneur David Vitale, Starward has revolutionised the global whisky landscape by embracing Australia's unique climate and wine heritage to create distinctively Australian expressions that challenge traditional whisky-making conventions.
The History of Starward
David Vitale established Starward Distillery with a bold vision: to create a whisky that was unapologetically Australian. Rejecting the notion that great whisky could only come from Scotland, Ireland, or Japan, Vitale saw opportunity in Melbourne's dynamic climate and Australia's world-class wine industry. The distillery's name, Starward, reflects the Southern Cross constellation that has guided explorers and innovators throughout Australian history.
Beginning operations in 2007 in a modest facility, Starward initially produced small batches whilst Vitale refined his approach to Australian whisky-making. The breakthrough came when he decided to mature whisky exclusively in Australian wine barrelsβa radical departure from traditional ex-bourbon or sherry casks. This decision would define Starward's house style and establish a new category within world whisky.
By 2016, Starward had outgrown its original home and moved to a purpose-built distillery in Port Melbourne, increasing production capacity whilst maintaining craft quality. The distillery now produces over one million litres of pure alcohol annually, with distribution across Australia and export markets including the United States, United Kingdom, Europe, and Asia.
Port Melbourne Location & Distillery
Starward's distillery is located at 50 Bertie Street, Port Melbourne, just three kilometres from Melbourne's CBD. This industrial waterfront precinct provides the perfect setting for whisky production, with proximity to Port Phillip Bay moderating temperatures whilst the urban environment reflects Starward's modern, innovative approach.
Melbourne's Climate Advantage
Melbourne's famously variable climateβoften experiencing four seasons in one dayβis central to Starward's whisky character. The city's temperate oceanic climate features warm summers (averaging 20-26Β°C), cool winters (10-15Β°C), and dramatic daily temperature fluctuations of 10-15Β°C year-round. This constant expansion and contraction drives the whisky deep into barrel staves and back out again, accelerating maturation and intensifying flavour extraction.
Where Scottish distilleries experience stable, cool conditions requiring 10-12 years for maturation, Starward's Melbourne location achieves comparable complexity in just 3-4 years. The result is vibrant, fruit-forward whiskies with rich colour and approachable character whilst maintaining depth and sophistication.
The Distillery Experience
The Port Melbourne facility features copper pot stills, fermentation vessels, and extensive barrel maturation warehouses. Starward operates a cellar door and tasting room where visitors can sample the range, learn about Australian whisky-making, and witness production firsthand. The distillery has become a destination for whisky enthusiasts and tourists exploring Melbourne's thriving craft spirits scene.
Starward Whisky Range & Products

Starward Nova
The flagship expression and Australia's best-selling single malt whisky, Nova is matured entirely in Australian red wine barrels sourced from premium wine regions including Barossa Valley, Yarra Valley, and McLaren Vale. These barrels previously held Shiraz, Cabernet Sauvignon, and Pinot Noir, imparting vibrant red fruit characters, subtle spice, and smooth tannins. Tasting notes include red berries, dried apricot, vanilla, and gentle oak with a creamy, approachable finish. Bottled at 41% ABV, Nova is perfect for both whisky newcomers and seasoned enthusiasts.
Starward Two-Fold
A uniquely Australian double grain whisky combining 60% wheat and 40% malted barley, Two-Fold is matured in Australian Apera (sherry-style fortified wine) casks. This innovative blend delivers stone fruit, vanilla, caramel, and gentle oak with exceptional smoothness at 40% ABV. Two-Fold's versatility makes it ideal for sipping neat, over ice, or in cocktails.
Starward Fortis
A bolder, higher-strength expression for those seeking intensity, Fortis is matured in heavily charred Australian red wine barrels. Bottled at 50% ABV without chill filtration, Fortis showcases concentrated dark fruit, chocolate, espresso, and warming spice. The name means "strength" in Latin, reflecting both the ABV and the robust flavour profile.
Starward Solera
Employing a traditional solera maturation system using Australian Apera barrels, Solera creates a rich, layered whisky with dried fruit, toffee, roasted nuts, and complex spice. The solera method continuously blends older and younger whiskies, ensuring consistency whilst building depth over time.
Starward Left-Field
The experimental series where Starward explores alternative wine barrel maturations including Chardonnay, Pinot Gris, Cabernet Franc, and fortified wine casks. These limited-edition releases showcase the distillery's innovative spirit and offer collectors unique expressions that push boundaries.
Starward Projects
Special releases and collaborations including single cask bottlings, distillery exclusives, and partnership expressions with winemakers, brewers, and other craft producers. These rare whiskies demonstrate Starward's commitment to experimentation and craft excellence.
Australian Wine Barrel Maturation
Starward's defining innovation is the exclusive use of Australian wine barrels for maturation. The distillery partners with premium wineries across Victoria, South Australia, and Western Australia, sourcing barrels that previously held world-class wines. These barrels are carefully selected based on the wine style, barrel age, and toast level to ensure optimal flavour contribution.
Red Wine Barrels
Shiraz, Cabernet Sauvignon, and Pinot Noir barrels from regions like Barossa Valley, Yarra Valley, and Margaret River impart red berry fruits, subtle tannins, spice, and colour. The wine-soaked staves contribute fruity esters and phenolic compounds that create Starward's signature fruit-forward character.
Fortified Wine Barrels
Australian Apera (sherry-style) barrels add richness, dried fruit, nutty complexity, and oxidative characters. These barrels create deeper, more complex whiskies with extended finish and layered flavours.
Alternative Wine Barrels
Chardonnay, Pinot Gris, and other white wine barrels offer lighter, more delicate fruit characters with citrus, stone fruit, and floral notes. These experimental maturations appear in Left-Field releases and special projects.
