Wirra Wirra Woodhenge Shiraz 2013
Fruit parcels were selected from various sites throughout the McLaren Vale region which typify the Woodhenge style, rich generous McLaren Vale Shiraz but still with Wirra Wirra stamped firmly over it. Gently crushed and destemmed to open top and static fermenters and tasted twice daily by the Wirra Wirra winemakers to determine number of daily plunges and pumpovers for tannin, colour and flavour extraction. Once pressed the parcels were run to oak barrels to complete fermentation. Racked and returned in individual parcels every 4 months during maturation, the wine was blended at 15 months of age and returned to oak to mature as a final blend. The wine was fined with a traditional light egg white fining and bottled.17 months maturation in a combination of French and American oak barriques and hogsheads. New oak component was 35% with 1, 2 and 3 year old oak making up the balance of oak used. After 15 months of maturation as individual vineyard components, the wine was blended and returned to seasoned oak for the last two months of oak maturation.Winery Notes
