Scotchmans Hill Sauvignon Blanc 2021 (Bellarine Peninsula)

The fruit for the 2021 Sauvignon Blanc was crushed, de-stemmed and pressed to tanks. Fermented at 13°C for 14 days, extended lees contact 4 months. 10% was fermented wild in older French barriques. The wine was then stabilised, filtered and bottled in August. This wine is vibrant in its youth, with cellaring potential to 2024.
