The Serafino McLaren Vale Cabernet Sauvignon 2016 is a deep red wine with bright purple hues. Lifted black berry and brambly aromas entwine with spices and hints of chocolate. It is full of flavour, texture and complexity. The fruit is voluptuous and full with blackberry coco, ripe red jalapeno, plum and black olive characters, finishing with a fine bead of tannin and power enhanced by quality integrated oak. A varietal perfect wine.

"Serafino = Steve. As in Maglieri. If you’ve ever wondered. Maglieri is such a wonderful word to pronounce.
Balance is key here. As is flow and/or momentum. Saltbush, red liquorice, leather and vanilla characters all roll attractively along the tongue. There’s a fine mesh of tannin but only that. It’s drinking well already, and should mature reliably too."

Serafino black label wines are selected from our estate grown individual vineyard blocks in McLaren Vale. McLaren Vale has a diverse mix of soil types and vineyard orientation that enhance the complexity of Serafino Wines. Distinctive varietal and regional characters are captured in all the premium black label wines and we hope you will enjoy these wines as much as we do!

This wine is produced from only the top 25 % of Cabernet Sauvignon fruit available from the Serafino McLaren Vale vineyards, from our Little Road and Malpas Road blocks. Once destemmed the grapes are fermented in small 4 tonne open fermenters. The temperature and extraction are monitored over a 7 day fermentation period. Tannin and colour extraction is achieved through regular pump overs of the fermentation cap. The wine is then pressed and allowed to finish the malolactic fermentation prior to spending up to 1 year in new and 1 year old French and American oak hogs heads.
