Pepperjack Barossa Valley Shiraz 2016
Rich dark red in colour with a dark purple rim, the nose shows rich concentrated red and blue fruits, dark chocolate and rich mocha notes with hints of spice and cedary oak.
The palate is rich and plush with good structure. There is a concentrated layer of berry fruit and oak which is balanced with the fine tannins to give length and power while finishing soft and full of flavour.
This wine can be enjoyed now but will also improve with careful cellaring.

After crushing and destemming, the parcels of fruit were fermented separately in traditional style fermenters. The wines were gently pressed, racked and transferred to seasoned and new oak for 12 months maturation, before blending and bottling. The 2016 growing seasoned commenced with dry and warm conditions through spring into early summer, resulting in good set and flowering conditions. A significant rain event in late January resulted in milder conditions throughout the remainder of January and February. These ideal milder conditions saw the grape phenology mature in line with sugars levels, producing full flavoured wines which retained their natural acidity and freshness.
Pepperjack Barossa Shiraz is a blend of parcels sourced from premium vineyards throughout the Barossa. Parcels selected have bright, rich fruit concentration with a range of flavours from red berries to rich plums and a hint of savoury notes.
The fruit is fermented for up to ten days depending on the parcel of fruit, then aged for 12 months in a mix of American and French Oak. Individual parcels of fruit are matured separately to maximise the blends complexity through a staged selection process. The resultant wine is soft and plush with lots of flavour, balance and a fine tannin structure. Winery Notes
