Pinot Noir is a fickle varietal that demands the utmost attention, both in the vineyard and in the winery to bring its true potential to the fore. It has many guises; from soft and supple, to powerful and masculine and everything in between. Pinot Noir is an incredibly honest varietal, telling the unique story of its place of origin like no other.
The winery aim to let each individual parcel of fruit tell that story by exclusively hand-picking at optimum flavour ripeness, gentle handling and cap management in the winery, and careful selection of oak to ensure the wines’ true characters are never overshadowed.
Nanny Goat Central Otago Pinot Noir 2021 fruit was hand picked and gently de-stemmed without crushing in order to retain as many whole berries as possible. Select parcels received up to 33% whole bunch depending on stem ripeness and tannin profile. Fermented in 4T open top fermenters using predominantly natural yeast, plunged a maximum of twice daily at the peak of ferment. 21 - 32 days on skins prior to pressing and barreling down into 225L French oak barriques.
