The Seville Estate Pinot Noir 2017 from the Yarra Valley is crimson in colour, with lifted aromas of dark cherry, spice and lees complexity.
Fine savoury tannins and a soft acid give an elegant finish.

"Vines planted '72, hand-picked and sorted in the vineyard, 70% whole berry/30% whole bunches, wild yeast-open ferment, 23 Dayton skins, matured in French oak (30% new) for 10 months. A meltingly beautiful pinot, reflecting the vintage and vineyard inputs. Right from the outset, it offers a spray of red flowers and spices (bouquet), and red fruits plus spices and a spider web of ultra-fine tannins (palate). This is an exercise in the purity of Pinot Noir at a high level, perfect to drink tonight or in a decade hence. Screwcap. 13.5% all."
