Red Hill Estate Cool Climate Pinot Noir 2019 (Mornington Peninsula)
Tasting NotesThis 2019 Red Hill Estate Cool Climate Pinot Noir is crimson red and purple in colour and has a pronounced bouquet of dark cherries, red and black berries, forest floor layering with game and cedar notes. On the palate this soft yet structured Pinot Noir displays distinctive varietal character’s of game, forest floor, and dark cherry. The wine has layers of red and dark berried fruit flavours, with integrated spice that layers itself over dark chocolate, liquorice and blackberry and finishes with soft silky tannins.
The Cool Climate Pinot Noir from Red Hill Estate was put together from a range of vineyards with each parcel having different treatments. Such as one parcel was cold soaked at zero degrees on skins for 2 days, others fermented straight on skin for 8-10 days.
Fermentation temperatures ranged from 20 - 25˚c to keep fruit purity. Once the parcels had finished fermenting, they were pressed off skins and racked to a balance of new and old french oak, with a portion staying un-oaked, so as to back blend in later to bring a brightness to the palate.
