In the making of the La Boheme Interlude Pinot Noir 2019 ,a combination of whole berry and whole bunch is tipped into open fermenters. 10-15 days of maceration and fermentation. Pressed, settled overnight and then filled to barrel by gravity. Allowed to mature for 8 months at 16°C in 225L and 500L French oak casks. It was early season but cracking year for Pinot in the Yarra Valley with low ripening, terrific flavour development, highly perfumed vintage.
