All vineyards must exceed 50 years of age to qualify for the Remus selection. Grapes were destemmed and crushed into small 1.5-tonne open-top fermenters, with selected fermenters receiving up to 15% whole-bunch clusters added to the destemmed berries. A pre-fermentation cold soak preceded fermentation, which was allowed to peak at 27°C before being cooled to 20°C for the remainder of its course. Daily hand plunging ensured gentle extraction over an extended period on skins.
