Back by popular demand. Project whiskies give Starward an extra opportunity to experiment and explore unexamined ideas. So to kick things off, They started with their Solera. An award-winning single malt, aged in Apera barrels.

Collaborating with kindred spirits over at Boatrocker Brewery. As the name suggests, these guys also like to do things a little differently. The distillery borrowed their ginger beer barrels to age this single malt. The beer recipe is under lock and key, but we can say it’s loaded with fresh ginger, lemongrass and citrus peel. These barrels were home for the Solera for 30 months. Plenty of time to soak up that juicy flavour.

Starward Ginger Beer Cask Whisky #6 has aromas of ginger, orange and dark chocolate. The palate sees strong spicy ginger, fresh vanilla and pineapple, balanced by sweet raisins and fig. With a big, warming mouthfeel with candied ginger and citrus.

While this may be a rare gem to add to your collection, we wouldn’t blame you if you cracked and sipped it straight away. Try your hand at a Ginger Beer Boilermaker cocktail, or splash a little of this secret ingredient into your next dessert.

Starward Ginger Beer Cask is back, their most popular and sought after Starward Project to date. Now in its sixth release, this delicious single malt whisky is more expressive than ever and the team’s most experimental to date.

The ginger beer recipe is a closely guarded secret by the distillery production team but includes huge amounts of ginger, lemongrass and citrus peel. The ginger beer was brewed in-house and aged in ex-Starward whisky barrels for 6 months before being disgorged. The red wine and Apera casks were blended together before being finished in the ginger beer casks for a further 6 months and bottled.

Loaded with citrus peel and spicy ginger, it’s a zesty little number with aromas of dark chocolate and orange, with a palate of fiery ginger, fresh vanilla, and pineapple.
