The Devil's Lair Hidden Cave Chardonnay 2015 is light straw in colour. A youthful wine of white nectarine, crème vanilla and pink grapefruit. Subtle hazelnut and lifted citrus aromas providing freshness and complexity. Elegant and generous white peach and toasty brioche flavours with a natural grapefruit freshness and vibrancy. Balances intense stone fruits, vibrancy and mouthfeel with textural vanilla undertones.

Deep in the south of Margaret River, beyond where most tourists venture, stand towering Karri forests, protecting a hidden cave they call the Devil’s Lair.

It’s after this unassuming and somewhat shy cave – one of Australia’s most significant archaeological sites – that Devil’s Lair is named.

Devil’s Lair is fortunate to be able to tread its own path, unrestrained by tradition, with a sense of wisdom that comes from a strong bond with an ancient land.

It’s the intuition of a talented team, the freedom to do things differently and the subtlety of the soils that makes Devil’s Lair wine respected for their great clarity, delicate fruit flavours and elegant structure.

Excellent winter rainfall provided a great start to the growing season followed by a warm spring with very little rain. December and January had a few intermittent showers but overall had characteristic warm days and cool nights allowing great flavours to develop with natural citrus acidity.

This wine was fermented in 20% new, 50% 1 and 2 year old French Oak Barriques and 30% stainless steel. The wine was stirred on lees for 4 months before bottling. Seasoned in French oak barriques.
