De Bortoli Deen Vat 1 Durif 2016 (Riverina)

Good winter rains and a mild spring provided good growing conditions leading into the harvest. After rain in January, a warm dry vintage followed allowing for the fruit to reach ripeness extremely early with a wealth of richness and flavour.

With regular vineyard visits, the fruit was picked once rich flavours and ripe tannins had developed. The fruit was cold soaked and co-fermented with a small amount of Viognier. The wine was then pressed and settled. A portion was stored in stainless tank to retain lively fruit freshness and the remainder matured in a combination of new and used American oak barrels for 12 months before blending and bottling.

This wine is ready to enjoy now or with good cellaring, it will continue evolving over the next 5-8 years.
