Ever since its inaugural 1991 Blanc de Blancs, Clover Hill wines have been synonymous with uncompromising quality and elegance. As Tasmania’s premier sparkling house, solely dedicated to exclusively producing Méthode Traditionelle sparkling wines, Clover Hill has held true to its and the style’s heritage. As Clover Hill’s portfolio of sparkling wines has further evolved, its reputation for boutique excellence has held true with accolades and critical acclaim across the entire collection.

Established in 1986 in the Pipers River region of Tasmania as a dedicated sparkling wine estate. The 66 hectare property overlooking Bass Strait has a similar climate to the Champagne region of France and plants only traditional sparkling wine varietals - Chardonnay, Pinot Noir and Pinot Meunier.

Clover Hill is created using Méthode Traditionelle. Furthermore, portions of this wine have been aged in small-format French oak foudres and barriques to highlight the complexity that can be produced from a sparkling house of this calibre. Winery Notes.

With light straw colour indictive of a chardonnay, this refined wine has developed a golden hue during its 3 years on tirage. In addition to its colour, this time has also resulted in a delicate bead with a persistant mousse.

On the nose, it displays citrus and red berries, with a hint of toasted brioche. The palate is delicate and creamy,but driven by a natural acidity from a cool and extended growing season in Tasmania.

Delicate, with superb length, this wine will drink well now and age for up to ten years. Winemaker Notes.
