'Daddy Koel' is a spontaneously fermented Koleschip from 'Boatrocker' Brewing. A Koelschip is a shallow vessel, traditionally made from copper, but modernised versions are made from stainless steel. The idea is that the boiling hot wort will cool down overnight, ready to be transferred into barrels the following day. As the wort cools, naturally occurring flora and bacteria floating in the currents of air will land in this wort and inoculate it. So, on a cold winter’s night in 2016 the koelschip went on its maiden voyage. The following day it was placed into 1st use ex-wine barrels, and left to ferment and live in the barrel room. Two years later, the result is Daddy Koel, a true expression of Braeside. With the aromas of hay, barnyard, cider and tropical leading in to a similar palate and a cleansing acidity to finish. Complex, yet delightfully simple.

Daddy Koel' began life as a one pot wonder, quite literally. Boatrocker's first trial koelschip was a 15L stainless steel pot placed out the back of the brewery in 2014. The following year a 200L stainless steel CIP trolley was used. Following encouraging results, Matt Houghton found a used cheesemakers trough and custom built Boatrocker’s first koelschip.

Hay, barnyard, cider and tropical on the nose, with the palate being similar, and a cleansing acidity to finish. Complex, yet delightfully simple.
Will reward careful cellaring – store upright in a cool, dark place. Ageing potential of at least 5 years. Will continue to develop in bottle.
