LAPIN is the first of our Site Fermentation Project barrel-aged beers to be released in cans. It celebrates the 2018 cherry harvest. Our foedre-aged sour blonde ale was re-fermented on 250kgs of organic Victorian Lapin Cherries for two months, before further conditioning in can.
The result is a complex, tart and refreshing sour.

Site Fermentation Project began as an extension of Hop Nation, allowing the brewers (previous winemakers), to experiment with a variety of mixed-fermentation brews. Their aim was to express the beauty of both winemaking and brewing, always with a focus on conveying site. Born from this project are mixed-fermentation beers, brewed and blended in Footscray and often co-fermented with unique parcels of single vineyard fruit, as well as wines made from a distinct site in Red Hill, Mornington Peninsula.
